There is also a single-volume "Sims" published by Tor/Forge (I think) that combines all five volumes that Cemetery Dance is still in the process of releasing. In order to make all five volumes mesh into a single volume, FPW had to do some minor editing. There isn't any difference as far as plot or characters goes. Your basically reading the same book, it's your choice of whether you want to read it as a single volume or broken up into five volumes.
My reccomendation would be to read the single volume. We won't see the fifth and final volume from CD until the Keep Prequel* is released.
*Don't everyone panic at once, this is an on-going joke and does not refer to an actual work in progress or even work in thought.

Like many of Paul's works, it conveys a wonderful ethical/moral message without in any way being preachy. I think Sims may some day, very soon, be seen as an important book in the field of bioethics; at least I hope so!
