Kill Bill was originally intended to be a single movie, but it was decided that it would be cut into two 2+ hour movies instead of one 4+ hour movie. Studio execs (and Tarantino) didn't think that audiences would want a 4+ hour movie AND long movies cannot have as many showings during the course of a day so therefore usually make less money.
This will not happen for a HP movie. There is too large of a kid base for the movies and there are already (theoretically) going to be seven books/movies. Assuming books each book continues to get longer, that would make eleven movies.
