I have become a cooking freak so I got lots of them. Garlicky Guacamole 2 ripe small Hass avocados 1 lemon, juiced (2-3 tablespoons of lemon juice if not using fresh lemons) 1 large clove garlic, minced 1 jalapeno, seeded and finely chopped 1 small plum tomato, seeded and finely chopped 1/2 small yellow skinned onion, finely chopped 1 teaspoon coarse salt Cut avocados in half around the pit. Separate the halves. Pop out pit with spoon, then scoop flesh of avocados into a bowl. Squeeze lemon over cut avocado pieces, being careful to not allow seeds of the lemon to get in the avocados. Add garlic, jalapeno, tomato, onion and salt to the bowl. Mash and mix the ingredients into a chunky dip using a fork. I like mine a little stronger then most so I add a bit more garlic and another jalapeno depending on how strong they are. And I usually double up this recipe since everyone at my house loves this stuff and it goes fast. But am I the only one that thinks Liev Schreiber could do RJ well, or is he too dark, too pretty, or both? I'd been thinking of him from the start, but couldn't think of who he was to mention the name before, until I happened across 'Sum of all Fears' at a friends house and remembered him as John Clark. Although since he hasn't been mentioned before in the thread, I'd guess it's not him. But I thought he'd be very good in the role. I could see Ryan Reynolds or Cole Hauser too, but I think I'd prefer Nathan Fillion or Ed Norton to either of them.
